For over 99% of our existence, humans have eaten relatively the same things: a plentiful array of clean meats, seafood, eggs, vegetables, traditional fats, fruits, nuts, and seeds. In just the last century, which is a mere blink of an eye in our 2.5 million year existence, our diet and lifestyles have changed drastically, yet our bodies have not. We are now eating and living in ways that are literally biologically incompatible with our genetic makeup — we are like fish trying to live in the jungle. We have made significant strides in preventing and curing acute diseases like viral and bacterial infections which used to account for most deaths just a few centuries ago. Yet today, chronic diseases like obesity, diabetes, heart disease, and other chronic degenerative conditions, all caused or at least exacerbated by dietary and lifestyle factors, now account for a majority of deaths worldwide. Hard to believe that just a few hundred years ago, these diseases hardly even existed.

Today, 4 plant foods make up a majority of the diet for 80% of the world’s population — wheat, rice, corn, and potatoes — all of which have only been regularly consumed for merely the last 0.5% of our existence. What’s more, over 50% of the calories the average American, and likely the average citizen of industrialized nations, consumes today come from flour, sugar and industrial seed oils, all of which are proven to contribute to system inflammation, while being void of the nutrients essential for vibrant health.


Gluten is a protein created by some grain-producing plants as a defense mechanism to protect them from consumption by inhibiting both digestion and the absorption of essential nutrients and minerals. Gluten is incredibly difficult to digest and can disrupt the delicate barrier of the intestine. This allows harmful substances to leak into the bloodstream, contributing to chronic inflammation and initiating an immune response to undigested food particles.  And this is only how it can affect those not allergic to gluten.

Celiac disease, an autoimmune disease characterized by an inflammatory response to gluten and damage to the tissue of the small intestines, affects 1 in 100 people, or 3million Americans, yet for every diagnosed case of Celiac disease, there are 6.4 cases that remain undiagnosed. The symptoms of Celiac disease are so vast, and the current testing methods so unreliable, that CD is unusually difficult to diagnose.

Non-celiac gluten sensitivity, as well as delayed food allergies to gluten or other problematic components of wheat, is estimated to affect as many as 1 in 10 people, or approximately thirty million Americans. Symptoms of Celiac disease, or a sensitivity or delayed food allergy to gluten and wheat are so diverse that it is often impossible to accurately identify it as the cause, making the elimination of gluten the only sure-fire way to accurately make this determination. Symptoms aren’t just physical, like digestive upset, fatigue, or headaches — there is a very strong connection between gluten sensitivity and neurological and psychiatric disease, including depression and autism.

Industrial seed oils

Industrial seed oils like corn, soybean, cotton, canola, sunflower, and safflower are an even more recent addition to the human diet and were originally developed for use in manufactured products and fuel. Although these oils are high in linoleic acid, an essential fatty acid beneficial for health, high consumption of linoleic acid in combination with a deficiency in omega 3 fatty acid contributes not only to chronic inflammation, but also interferes with neurological functioning. Linoleic acid is also heat-sensitive, and when exposed to high heat, like during cooking, it oxidizes and promotes the formation of compounds associated with a variety of diseases ranging from Alzheimer’s to fibromyalgia to nonalcoholic fatty liver disease, and are also a major component of oxidized LDL and atherosclerotic plaques.

Refined Sugar

Human physiology evolved on a diet containing very little sugar and virtually no refined carbohydrates, defined as grains and starches stripped of most of their nutritional value. Yet nowadays, sugar alone is responsible for approximately 20% of the calorie intake of modern diets, with the average American consuming between 120 and 150 pounds of refined sugar each year. Refined sugar contains no nutritional value and consumption results in a sudden spike in blood sugar, which the body responds to by releasing insulin to move sugar out of the bloodstream and either into cells to be used as energy, or stored as fat. Chronic high blood sugar can lead to insulin resistance, which contributes to a lengthy list of diseases including diabetes 2, cardiovascular disease, metabolic syndrome, and Alzheimer’s. Frequent blood sugar fluctuations are a major contributing factor to mood disorders including depression and anxiety, and cause a vicious cycle of sugar and carbohydrate cravings.

These common staples of our modern diet also have a few things in common. They are all calorie-dense, providing a poor source of fuel for basic functioning, yet are not nutrient-dense, thus providing very few, if any, of the 40+ nutrients your body needs for proper physiological function. Not only does suboptimal intake of these nutrients contribute to disease and shorten lifespan, but nutrients in food literally talks to your cells, nerve cells included, which results in how your DNA functions.

They also have detrimental effects on the condition of our gut health, at which lies the very foundation of our entire body’s functioning. The bacteria that colonize your digestive tract, totaling an impressive 100 trillion microbes which outnumber our own cells ten to one, supports every conceivable feature of your health. Not only is this inner ecology responsible for the body’s detox pathways and for helping digest food and absorb nutrients, but 70% of the body’s immune system is found in the gut. The immune system is designed to do so much more than repel foreign invaders such as viruses — it orchestrates every healing process in the body, keeps potential cancerous cells “in check,” and can help prevent the onset of nearly every disease known to man.

The gut is referred to as “the second brain,” as it is constantly communicating with the brain in our head via the vagus nerve, thus any irritation in the gastrointestinal system can trigger mood changes and contribute to depression, anxiety, autism, and other psychological ailments.

So what factors deliver the biggest blows to gut health? You guessed it. Chronic stress, a lack of nutrients that support healthy, diverse tribes of good microbes, and chronic exposure to substances that kill or otherwise negatively change the composition of the bacterial colonies, from environmental chemicals and drugs like antibiotics to ingredients such as artificial sugars and processed gluten-containing foods, all have a devastating effect on this complex, delicate microbiome. What’s more is that refined sugar, refined carbs, and artificial sweeteners also provide a source of food for the yeast living in your gut that is usually kept in check in otherwise healthy conditions. This overgrowth of dangerous bacteria and fungi can result in SIBO, or small intestine bacterial overgrowth, systemic yeast infections, bloating, gas, and constipation or diarrhea, and so much more.
